Sweet and Sour Broccoli Salad

Greens are the #1 item missing from the typical American diet. The more vegetables and greens the better.

Yield: 6 Servings


Ingredients

  • 4 cups broccoli florets, cut into small pieces

  • ½ cup chopped onion

  • ¼ - 1/3 cup grapes or dried fruit (I used dried cranberries)

  • 1 cup red cabbage

  • 1 TBS olive oil

  • ¼ cup nuts of choice (I used sunflower seeds to reduce fat)

  • ½ cup red wine vinegar

  • ¼ cup honey

  • 2 TBS reduced sodium soy sauce (I used Tamari)

Instructions

  1. All items are chopped and mixed together for a quick and easy spring or summer salad!

  2. Serve immediately or chill if you’d like.


Broccoli is in the cruciferous family and contains indoles which are effective in protecting against certain forms of cancer. It has a rich supply of vitamins and minerals.
