Roasted Red Pepper Hummus

Roasted red pepper hummus is a favorite dip for breads, crackers, dips and vegetables! Roasting gives it that extra zest!

Yield: Makes: 3 1/2 cups


Ingredients

  • 1/2 cup water

  • 6 ounces roasted red pepper, diced

  • 2 tablespoons olive oil

  • ½ cup tahini paste

  • 2 ½ tablespoons lemon juice

  • 2 garlic cloves, peeled

  • 3 cups canned garbanzo beans, drained and rinsed

  • 1 teaspoon cumin powder

  • Pinch of cayenne pepper

  • 1 teaspoon Himalayan Sea Salt

Instructions

  1. Place all ingredients into the food processor in the order listed and secure lid.

  2. Turn machine on and slowly increase speed.

  3. Process for 1 minute, pause to scrape sides of container. Continue blending until smooth. Add additional water if necessary to reach desired consistency.

  4. Store in air tight container in the refrigerator for 1 week.
